This is a great recipe for company. Quick and Easy with a big wow factor.
Shrimp Scampi over Pasta
- 1 ½ pound large shrimp (about 16)
- ½ cup clarified butter
- Olive oil
- 4 tablespoons minced garlic
- 6 green onions (scallions) – thinly sliced
- 1/3 cup white wine
- 2 tablespoons fresh lemon juice
- 8 sprigs parsley finely chopped
- Salt and pepper to taste
Rinse shrimp and set aside. Cover bottom of large skillet with olive oil. Add butter and heat in large skillet over medium heat. Cook garlic 1 or 2 minutes or until softened but not browned. Add shrimp, green onions, wine and lemon juice. Cook until shrimp are pink and firm, about 1 to 2 minutes on each side. Do not overcook.
Meanwhile, cook a pound of pasta. I recommend thick spaghetti. When pasta is ready, pour the scampi sauce and shrimp over the spaghetti and toss. Feel free to add more olive oil as needed to ensure the pasta is moist. You can even heat up more olive oil, butter, lemon and wine if you feel it’s needed.
Add freshly grated Parmesan cheese. Add chopped parsley and salt and pepper before serving.
