Best Kept Secret for Foodies in the Capital District – Cooking Classes with Chef Ken @ Normanside Country Club

Chef Ken and his team offer cooking classes at the Normanside Country Club.

In March LadyChowChow attended African Cooking.  Chef Ken did not disappoint and better yet he cooked and served Doro Wat. Doro Wat is my favorite Ethopian food and this recipe is very easy. Have no fear it is not super hot but very tasty.

4 tbsp oil

4- 5 Chicken thighs skinless

3 cups onions coursely chopped 

2 tbsp chopped garlic

2 tsp finely chopped jalapeno

1/4 cup lemon juice

2 tbsp butter

1 1/2 tbsp berbere spice  ( http://www.food.com/recipe/berbere-spice-mix-ethiopian-454642 )

2 cups chicken stock

8 hard boiled eggs

Salt and Pepper

Heat oil in pot, season chicken with salt and pepper and brown in pot on both sides

Remove chicken and add onions

Cook until onions are translucent

Add Chicken back to pot

Add Garlic, jalapeno, lemon juice, butter, berbere spice, crushed tomatoes and stock

Simmer until chicken falls of the bone

Remove chicken bones and season with salt and pepper

Garnish with hard boiled eggs

Cooking Parties with the Chef are four course meals paired with specifically chosen wines. Each course will be demonstrated in front of you. Each guest of our cooking party receives a goodie bag with food related gifts and a booklet with the recipes you learned during the evening. Open to members and non-members!
