1, 2, 3, Easy Cream of Mushroom Soup by Chef Ken – Normanside Country Club, Delmar, NY

mushroomsoup52 cups Dry Mushrooms

5 1/2 Cups Warm Chicken soup

2oz. Olive Oil

3/4 cup diced Onion

1/4 tsp  Crushed Red Pepper

2 tsp. Garlic Chopped

3/4 cups Celery Chopped

1 cup Potato Diced

4tsp. Salt

1/2 tsp. Pepper

2 tsp Fresh Oregano

2 tsp. Fresh Parsley

– Add Mushrooms to stock and let steep for 20 minutes.

– Cook onions with crushed red pepper in oil until they start to soften, ad garlic and cook for a few minutes

-Add potatoes and celery an cook for a few minutes

– Add mushrooms, stock, salt, pepper and oregano

– Simmer for 20 minutes

– Add parsley and cream

– Thicken as desired.
